Two kinds of cheese griddled slowly in butter between slices of soft white bread, so the crust turns amber before the inside is fully molten.

Ingredients
- 4 slices soft white sandwich bread
- 3 oz sharp cheddar, coarsely grated
- 2 slices American cheese
- 3 tbsp salted butter, softened
- 1/4 tsp kosher salt
Before you cook
- Grate the cheddar on the large holes of a box grater so it melts evenly.
- Spread butter generously to the very edges of one side of each slice of bread.
- Set the bread butter side down on a board in two pairs.
Steps
- Set a heavy skillet over medium-low heat and let it warm for 2 minutes, since high heat will brown the bread before the cheese melts.
- Lay a slice of American cheese on the dry face of two of the bread slices.
- Pile half the grated cheddar over each slice of American cheese and spread it to the edges.
- Sprinkle a small pinch of salt over the cheese.
- Close each sandwich with a remaining slice of bread, buttered side facing out.
- Place both sandwiches in the skillet.
- Cook for 4 minutes, pressing lightly with a spatula once or twice, until the underside is evenly golden brown.
- Flip the sandwiches and cook for 3 to 4 minutes more, until the second side matches and cheese is creeping out the sides.
- Move the sandwiches to a board and wait 1 minute before cutting so the cheese sets just enough to stay put.
- Cut each one in half on the diagonal and serve hot.
