
Fried Bologna Sandwich

Thick-cut bologna notched around the rim so it cannot dome, fried until the edges curl and blacken, then slapped on white bread with mustard.

Ingredients
- 8 slices bologna, cut 1/4 inch thick
- 8 slices soft white sandwich bread
- 4 slices American cheese
- 2 tbsp salted butter
- 4 tsp yellow mustard
- 2 tbsp mayonnaise
- 8 dill pickle chips
- 1/4 tsp black pepper
Before you cook
- Cut four short notches around the edge of each bologna slice, spaced like the points of a compass, so the slices stay flat instead of cupping in the pan.
- Lay the bread out in pairs on a board.
Steps
- Melt 1 tablespoon of the butter in a large skillet over medium-high heat.
- Lay four bologna slices in the pan in a single layer.
- Fry for 2 minutes, until the underside is browned in patches and the cut edges have curled and darkened.
- Flip the slices and fry for 1 minute more.
- Push the slices into four stacks of one and lay a slice of American cheese over each, then turn off the heat and let it melt for 30 seconds.
- Move the bologna to a plate and fry the remaining four slices in the rest of the butter.
- Wipe the skillet and toast the bread slices in it for 1 minute per side if you like them warm.
- Spread mayonnaise on four slices of bread and mustard on the other four.
- Stack two slices of fried bologna and a slice of cheese on each mayonnaise slice.
- Add two pickle chips and a grind of black pepper.
- Close the sandwiches with the mustard slices and eat them immediately, while the edges are still crisp.
