
Grilled Peanut Butter and Banana Sandwich

The Memphis griddled sandwich Elvis made famous, with sliced banana melting into peanut butter between slices of bread fried in butter.

Ingredients
- 4 slices white sandwich bread
- 6 tbsp creamy peanut butter
- 2 ripe bananas
- 4 tbsp salted butter
- 4 slices bacon, optional
- 1 tbsp honey, optional
- 1/4 tsp ground cinnamon
Before you cook
- Peel the bananas and slice them into thin coins.
- Spread three tablespoons of peanut butter on one side of two bread slices.
- Butter one side of all four bread slices, using about 2 tablespoons of the butter.
Steps
- Cook the bacon in a skillet over medium heat for about 8 minutes, until crisp, then drain it and pour off the fat, if you are using it.
- Lay the banana coins over the peanut butter in an overlapping single layer.
- Dust the bananas with the cinnamon and drizzle on the honey if you want it sweeter.
- Lay the bacon strips over the banana, breaking them to fit.
- Close each sandwich with a remaining slice of bread, buttered side facing out.
- Melt the remaining 2 tablespoons of butter in the skillet over medium-low heat.
- Set both sandwiches in the pan and press them down with a spatula.
- Griddle for 3 minutes, until the underside is dark golden and smells toasted.
- Flip the sandwiches and griddle for 3 minutes more, until the peanut butter has gone runny and the bananas are soft.
- Move the sandwiches to a board, wait a minute, then cut them in half and serve warm.
