  1. Cook the bacon in a skillet over medium heat for about 8 minutes, until crisp, then drain it and pour off the fat, if you are using it.
  2. Lay the banana coins over the peanut butter in an overlapping single layer.
  3. Dust the bananas with the cinnamon and drizzle on the honey if you want it sweeter.
  4. Lay the bacon strips over the banana, breaking them to fit.
  5. Close each sandwich with a remaining slice of bread, buttered side facing out.
  6. Melt the remaining 2 tablespoons of butter in the skillet over medium-low heat.
  7. Set both sandwiches in the pan and press them down with a spatula.
  8. Griddle for 3 minutes, until the underside is dark golden and smells toasted.
  9. Flip the sandwiches and griddle for 3 minutes more, until the peanut butter has gone runny and the bananas are soft.
  10. Move the sandwiches to a board, wait a minute, then cut them in half and serve warm.
