  1. Dredge a steak in the seasoned flour, dip it in the egg wash, and press it back into the flour a second time.
  2. Set the breaded steak on a rack and repeat with the remaining steaks.
  3. Heat the oil in a large cast iron skillet over medium-high heat until a pinch of flour sizzles instantly.
  4. Fry two steaks at a time for 3 minutes per side until deep golden.
  5. Move the fried steaks to a rack set over a sheet pan.
  6. Pour off all but 3 tablespoons of oil, leaving the browned bits in the skillet.
  7. Add the sliced onion and cook over medium heat for 7 minutes until browned at the edges.
  8. Sprinkle the reserved 1/4 cup seasoned flour over the onions and stir for 2 minutes until it smells nutty.
  9. Whisk in the beef broth a little at a time until the gravy is smooth.
  10. Stir in the Worcestershire sauce and simmer for 5 minutes until the gravy coats a spoon.
  11. Return the steaks to the skillet and spoon gravy over each one.
  12. Cover and cook over low heat for 10 minutes so the steaks soak up the gravy.
  13. Serve each steak with a heavy ladle of onion gravy.
