A Grand Rapids diner tradition: a fat beef and bean burrito drowned in chili gravy, buried in cheese and run under the broiler until it bubbles.

Steps

  1. Brown the ground beef in a large skillet over medium-high heat for 8 minutes, breaking it into small crumbles.
  2. Add the onion and cook 5 minutes until softened.
  3. Stir in the garlic, 1 tablespoon of the chili powder, the cumin, oregano and 1 teaspoon of the salt, and cook 1 minute until fragrant.
  4. Scrape half the beef mixture into a bowl and set it aside for filling.
  5. Sprinkle the flour over the beef left in the skillet and stir for 2 minutes to cook out the raw taste.
  6. Whisk in the tomato sauce, beef broth, remaining 1 tablespoon chili powder and remaining 1/2 teaspoon salt.
  7. Simmer the sauce for 12 minutes, stirring often, until it thickens enough to coat a spoon.
  8. Warm the tortillas in a dry skillet for 20 seconds a side so they roll without cracking.
  9. Spread a quarter of the refried beans down the center of each tortilla and top with the reserved beef.
  10. Add a small handful of cheese, then fold the sides in and roll each burrito tightly.
  11. Set the burritos seam side down in a broiler-safe baking dish.
  12. Ladle the chili gravy over the burritos until they are completely covered.
  13. Blanket the top with the remaining cheese.
  14. Broil for 4 minutes, until the cheese is melted and blistered in spots.
  15. Scatter scallions, lettuce and pickled jalapenos over the top and serve with a fork and knife.
