Turkey's answer to the region's tomato-and-egg breakfasts, where the eggs are stirred through the softened pepper and tomato base rather than left whole, giving it a softer, creamier curd than shakshuka.

Ingredients
- 2 tbsp olive oil or butter
- 1 green bell pepper, diced
- 1 long green Turkish or Anaheim pepper, diced
- 2 large tomatoes, grated or finely chopped
- 1/2 tsp salt
- 1/2 tsp pul biber (Aleppo pepper), plus more for serving
- 4 eggs
- 2 tbsp crumbled feta (optional)
- Fresh crusty bread, for serving
Before you cook
- Dice both peppers.
- Grate the tomatoes on the large holes of a box grater, discarding the skins.
Steps
- Heat the olive oil in a skillet over medium heat.
- Add the diced peppers to the skillet.
- Cook the peppers, stirring occasionally, until softened, about 6 minutes.
- Add the grated tomatoes to the skillet.
- Season with salt and pul biber.
- Simmer the mixture uncovered, stirring occasionally, for 8 minutes, until most of the liquid has evaporated.
- Crack the eggs directly into the skillet.
- Stir the eggs gently and continuously into the tomato mixture.
- Cook, stirring, until the eggs are softly scrambled and just set, about 2 minutes.
- Remove the skillet from the heat while the eggs are still slightly wet.
- Sprinkle the crumbled feta over the top, if using.
- Serve immediately straight from the skillet with crusty bread.
