Tonga's national dish: raw white fish "cooked" in citrus juice until opaque, then folded through cool coconut milk with crunchy vegetables for a light, tropical salad.

Ingredients
- 1 lb very fresh firm white fish fillet, such as snapper or mahi mahi, skinned
- 1/2 cup fresh lime or lemon juice
- 1 cup coconut milk
- 2 tomatoes, diced
- 1/2 cucumber, diced
- 3 green onions, finely sliced
- 1 small red chili, finely chopped
- Salt to taste
Before you cook
- Cut the fish into small, even 1/2-inch cubes.
- Dice the tomatoes and cucumber and slice the green onions.
Steps
- Place the cubed fish in a glass or ceramic bowl and pour over the lime juice, making sure it is fully covered.
- Cover and refrigerate for 30 to 45 minutes, until the fish turns opaque, stirring once halfway through.
- Drain off most of the citrus juice, leaving about 2 tablespoons in the bowl with the fish.
- Add the tomatoes, cucumber, green onions and chili to the fish.
- Pour in the coconut milk and stir gently to combine.
- Season with salt to taste.
- Chill for 10 minutes before serving.
