Ingredients
- 1 cup wild rice
- 6 cups turkey or chicken broth
- 2 cups cooked, shredded turkey or chicken
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 tbsp butter
- 1 tsp dried sage
- 1/2 tsp dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley, for serving
Before you cook
- Rinse the wild rice thoroughly under cold running water until the water runs clear.
- Dice the onion, carrots and celery.
Steps
- Melt the butter in a large pot over medium heat.
- Add the onion, carrots and celery and cook for 6 minutes, until softened.
- Add the rinsed wild rice to the pot and stir to coat in the butter.
- Pour in the broth.
- Add the sage, thyme and bay leaf.
- Bring the pot to a boil.
- Reduce the heat to low, cover, and simmer for 45 minutes, until the wild rice grains split open and turn tender.
- Stir in the shredded turkey and simmer for 5 more minutes, until heated through.
- Season with salt and pepper.
- Remove the bay leaf and stir in the parsley just before serving.
