A fiery, everyday Bhutanese chicken stew built almost entirely from chilies, tomatoes and garlic, simmered down to a thick, deeply savory sauce that is eaten with red rice.

Ingredients
- 1 1/2 lbs boneless chicken thighs, diced
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1-inch piece ginger, minced
- 3 tomatoes, chopped
- 4 to 6 green chilies, sliced
- 1/4 cup chopped fresh cilantro
- Salt to taste
Before you cook
- Dice the chicken thighs into bite-sized pieces.
- Chop the onion, garlic, ginger, tomatoes and chilies.
Steps
- Heat the oil in a pot over medium-high heat.
- Add the onion and cook for 4 minutes, until softened.
- Add the garlic and ginger and cook for 1 minute, until fragrant.
- Add the diced chicken and cook for 5 minutes, stirring, until lightly browned.
- Add the tomatoes and chilies to the pot.
- Season with salt.
- Cover and simmer for 15 minutes, stirring occasionally, until the chicken is cooked through and the tomatoes have broken down into a thick sauce.
- Uncover and simmer for 5 more minutes if the sauce needs to reduce further.
- Stir in the cilantro just before serving.
