Ingredients
- 1 cup raw unsalted peanuts
- 1 lb pumpkin leaves, spinach or collard greens, chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cups water
- Salt to taste
Before you cook
- Toast the peanuts in a dry skillet over medium heat for 5 minutes, tossing often, until fragrant.
- Grind the toasted peanuts in a food processor to a coarse powder.
- Wash and roughly chop the greens.
Steps
- Bring the water to a boil in a pot.
- Add the onion and tomatoes to the boiling water.
- Simmer for 5 minutes, until the tomatoes soften.
- Stir in the ground peanuts until evenly distributed.
- Add the chopped greens to the pot.
- Cover and simmer for 15 to 20 minutes, stirring occasionally, until the greens are tender and the sauce has thickened.
- Season with salt before serving.
