Aruba's everyday cornmeal pancake, named for the vigorous beating the batter gets, served warm with butter at breakfast or alongside a savory stew any time of day.

Ingredients
- 1 cup fine yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 1 1/4 cups milk or water
- Butter, for serving
Before you cook
- Whisk the cornmeal, flour, baking powder, salt and sugar together in a bowl.
Steps
- Pour the milk into the dry ingredients.
- Beat the batter vigorously by hand for 2 to 3 minutes, until very smooth and slightly thickened.
- Heat a non-stick skillet over medium heat, without oil.
- Ladle about 1/4 cup of batter into the skillet for each pancake.
- Cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set.
- Flip and cook the other side for 2 minutes, until golden.
- Repeat with the remaining batter.
- Serve warm spread with butter.
