  1. Combine the oats, nuts, coconut, cinnamon, and salt in a large bowl.
  2. Whisk the honey, oil, and vanilla together in a small bowl until smooth.
  3. Pour the wet mixture over the oats and stir until every piece is evenly coated.
  4. Spread the mixture in an even layer on the lined baking sheet, pressing it down firmly.
  5. Bake for 20 minutes.
  6. Rotate the pan and bake for another 20 minutes, without stirring, until deep golden.
  7. Remove the granola from the oven and let it cool completely on the pan, undisturbed, for at least 45 minutes.
  8. Break the cooled granola into clusters.
  9. Stir in the dried fruit.
  10. Store in an airtight container for up to two weeks.
