Toronto's signature sandwich, thick slices of cornmeal-crusted, brined pork loin griddled until the crust crisps and piled onto a soft roll with mustard.

Ingredients
- 1 lb peameal bacon, sliced into 1/4-inch rounds
- 1 tbsp vegetable oil
- 4 soft white rolls or kaiser buns
- 3 tbsp honey mustard
- Sliced dill pickles, for serving
Before you cook
- Slice the peameal bacon into 1/4-inch rounds if not already sliced.
- Split the rolls in half.
Steps
- Heat the vegetable oil in a large skillet over medium heat.
- Lay the peameal bacon slices in the skillet without overcrowding.
- Cook for 3 minutes per side, until the cornmeal crust turns golden and the edges crisp.
- Toast the cut sides of the rolls in the same skillet for 1 minute until lightly golden.
- Spread the honey mustard over the toasted rolls.
- Stack 2-3 slices of peameal bacon onto the bottom half of each roll.
- Add pickle slices on top of the bacon.
- Close the sandwiches and serve immediately while the bacon is hot.
