A Mumbai street-food chaat of puffed rice tossed at the last second with crisp sev, boiled potato, onion and three chutneys, meant to be eaten within minutes before it turns soggy.

Ingredients
- 4 cups puffed rice (murmura)
- 1/2 cup sev (crispy chickpea noodles)
- 1 cup crushed papdi (or plain crackers)
- 1 potato, boiled, peeled, and diced
- 1 small red onion, finely chopped
- 1 tomato, finely chopped
- 2 tbsp chopped cilantro
- 3 tbsp tamarind chutney
- 2 tbsp green chutney (cilantro-mint)
- 1 tsp chaat masala
- 1/2 tsp roasted cumin powder
- Juice of 1/2 lemon
- Salt to taste
Before you cook
- Boil the potato until tender, then peel and dice it.
- Finely chop the onion, tomato, and cilantro.
- Crush the papdi into bite-sized pieces.
Steps
- Combine the puffed rice, crushed papdi, diced potato, onion, and tomato in a large mixing bowl.
- Add the tamarind chutney and green chutney.
- Sprinkle in the chaat masala, roasted cumin powder, and salt.
- Squeeze the lemon juice over the mixture.
- Toss everything together quickly and gently so the puffed rice doesn't crush.
- Transfer the bhel puri to serving bowls immediately.
- Top each bowl with sev and chopped cilantro.
- Serve at once, before the puffed rice has a chance to soften.
