Ingredients
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup cold butter, cubed
- 2 eggs, divided
- 1/2 cup cold water
- 1 lb ground beef
- 1 onion, finely chopped
- 2 medium potatoes, peeled and diced small
- 2 carrots, peeled and diced small
- 2 tsp curry powder
- 1/2 tsp dried thyme
- 2 beef bouillon cubes, crumbled
- 2 tbsp all-purpose flour
- 1/2 cup water
Before you cook
- Cube the cold butter and keep it chilled.
- Peel and dice the potatoes and carrots into small cubes.
- Finely chop the onion.
Steps
- Whisk the 3 cups flour, baking powder, and salt together in a large bowl.
- Rub the cold butter into the flour with your fingertips until the mixture resembles coarse crumbs.
- Whisk 1 egg into the cold water, then mix it into the flour until a dough just comes together.
- Wrap the dough and refrigerate it for 30 minutes.
- Heat a large skillet over medium heat and cook the ground beef, breaking it up, for 5 minutes.
- Add the onion, potatoes, and carrots to the skillet and cook for 8 minutes until the vegetables begin to soften.
- Stir in the curry powder, thyme, and crumbled bouillon cubes.
- Whisk the 2 tbsp flour into the 1/2 cup water, then stir it into the filling to thicken it.
- Cook the filling for 3 more minutes until thickened, then remove it from the heat and let it cool completely.
- Preheat the oven to 375 F.
- Roll out the chilled dough to 1/4-inch thickness and cut out circles about 5 inches across.
- Spoon 2 tablespoons of cooled filling onto one half of each circle.
- Fold the dough over the filling and press the edges together, then crimp with a fork to seal.
- Beat the remaining egg and brush it over each pie.
- Arrange the pies on a baking sheet and bake for 30-35 minutes until golden brown.
