Ingredients
- 2 cups mixed dried fruit (raisins, sultanas, currants)
- 1 cup strong brewed black tea, cooled
- 1/2 cup dark brown sugar
- 2 cups self-rising flour
- 1 tsp mixed spice (or a blend of cinnamon, nutmeg, and allspice)
- 1 egg, beaten
- 1 tbsp orange marmalade, warmed, for glazing
Before you cook
- Combine the dried fruit, cooled tea, and brown sugar in a bowl.
- Cover the bowl and let the fruit soak at room temperature overnight.
- Grease a loaf pan and line it with parchment paper.
Steps
- Preheat the oven to 325 F.
- Sift the self-rising flour and mixed spice into the bowl of soaked fruit.
- Add the beaten egg to the bowl.
- Stir everything together until just combined into a thick, heavy batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, until a skewer inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes.
- Turn the loaf out onto a wire rack and brush the top with the warmed marmalade while still warm.
- Let the loaf cool completely before slicing.
- Serve slices thickly buttered.
