A coiled spiral of paper-thin filo packed with spiced ground beef, baked until the layers crackle, then finished with a splash of yogurt.

Ingredients
- 1 lb ground beef
- 2 large onions, finely diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup water
- 1 lb store-bought filo pastry sheets
- 1/2 cup vegetable oil, plus more for the pan
- 1/2 cup melted unsalted butter
- 1/2 cup warm water, for baking
- Plain yogurt, for serving
Before you cook
- Preheat the oven to 400F.
- Grease a round 12-inch baking pan or pizza pan generously with oil.
- Finely dice the onions.
Steps
- Mix the ground beef, diced onions, salt, pepper, paprika and 1/4 cup water together by hand until well combined.
- Lay one sheet of filo on the counter and brush it lightly with the oil-butter mixture.
- Spoon a thin line of the meat filling along one long edge of the sheet.
- Roll the filo up loosely around the filling into a long, thin log, tucking in the ends.
- Coil the log loosely into a spiral and set it in the center of the greased pan.
- Repeat with the remaining filo and filling, coiling each new log onto the outside of the spiral until the pan is full.
- Brush the top of the burek generously with the remaining oil-butter mixture.
- Pour the 1/2 cup warm water evenly over the top of the pastry.
- Bake for 40 to 45 minutes, until deep golden brown and crisp on top.
- Let the burek rest for 10 minutes before slicing into wedges.
- Serve warm with a bowl of plain yogurt for spooning over each piece.
