Ingredients
- 2 French baguettes, halved lengthwise and then crosswise
- 1/2 lb ground beef or mutton
- 1 onion, finely chopped
- 4 eggs
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons vegetable oil
- Sliced cucumber, for serving
- Ketchup and chili sauce, for serving
Before you cook
- Finely chop the onion.
- Cut the baguettes in half lengthwise, then crosswise into 4 sandwich-length pieces.
Steps
- Cook the ground beef in a dry skillet over medium-high heat for 5 minutes, breaking it up, until browned.
- Stir in the onion, curry powder, salt and pepper and cook for 3 minutes, until the onion softens.
- Remove the meat mixture from the heat and let it cool slightly.
- Beat the eggs in a bowl and stir in the cooked meat mixture.
- Heat 1 tablespoon of the oil in a large flat skillet over medium heat.
- Pour a portion of the egg-meat mixture into the skillet in an oval about the size of a baguette half.
- Immediately press the cut side of a baguette half down onto the egg mixture so it soaks in.
- Fry for 3 minutes, until the egg is set and golden underneath.
- Flip the whole piece over and fry the bread side for 1 to 2 minutes, until toasted.
- Repeat with the remaining oil, egg mixture and bread.
- Serve warm with sliced cucumber, ketchup and chili sauce.
