  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the sweet potatoes, eggplant, okra and tomatoes to the pot.
  4. Pour in the water and add the bouillon cube.
  5. Bring to a boil, then reduce to a simmer.
  6. Cover and cook for 25 minutes until the vegetables are almost tender.
  7. Ladle out 1 cup of the hot liquid into a small bowl.
  8. Whisk the peanut butter into the reserved liquid until smooth.
  9. Stir the peanut butter mixture back into the pot.
  10. Simmer uncovered for 10 minutes until the stew thickens.
  11. Stir in the chopped greens and cayenne pepper.
  12. Cook for 5 more minutes until the greens wilt.
  13. Season with salt to taste.
  14. Serve hot with rice, millet or sorghum.
