A bright, peppery Bahamian soup built on lime juice and allspice, traditionally eaten on weekend mornings and said to be the island's best cure for a rough night before.

Ingredients
- 2 lb chicken wings and thighs
- 1/2 cup fresh lime juice, divided
- 1 tsp seasoned salt
- 1 onion, sliced
- 1 green bell pepper, sliced
- 2 potatoes, peeled and cubed
- 1 Scotch bonnet pepper, left whole
- 1 tsp whole allspice berries
- 2 bay leaves
- 6 cups water
- Salt to taste
Before you cook
- Coat the chicken in half the lime juice and the seasoned salt.
- Cover and let the chicken marinate at room temperature for 1 hour.
- Slice the onion and bell pepper.
- Peel and cube the potatoes.
Steps
- Put the marinated chicken into a large pot.
- Add the sliced onion and bell pepper.
- Add the allspice berries and bay leaves.
- Pour in the water.
- Bring to a boil, skimming off any foam that rises.
- Reduce the heat to a simmer.
- Add the whole Scotch bonnet pepper.
- Cover and simmer for 25 minutes.
- Add the cubed potatoes.
- Simmer uncovered for 15 minutes until the potatoes and chicken are fully tender.
- Remove the whole pepper, bay leaves and allspice berries.
- Stir in the remaining lime juice.
- Season with salt to taste.
- Ladle into bowls and serve hot with johnny cake or crackers.
