Salt cod worked into a light Caribbean fritter batter and fried until crisp, a dish that traces straight back to West African akara and turns up under a different name on nearly every island.

Ingredients
- 1/2 lb boneless salted cod
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 scallion, finely chopped
- 1 sprig fresh thyme, leaves only
- 1/2 Scotch bonnet pepper, finely chopped
- 1/2 tsp black pepper
- 3/4 cup water
- Vegetable oil, for frying
Before you cook
- Soak the salted cod in cold water for at least 8 hours or overnight, changing the water twice.
- Drain the cod, then simmer it in fresh water for 10 minutes and flake it into small pieces, discarding any skin or bones.
- Finely chop the onion, garlic, scallion and pepper.
Steps
- Whisk the flour and baking powder together in a large bowl.
- Stir in the flaked cod, onion, garlic, scallion, thyme and Scotch bonnet.
- Add the black pepper.
- Pour in the water and stir until a thick, scoopable batter forms.
- Let the batter rest for 10 minutes.
- Pour vegetable oil into a deep skillet to a depth of 2 inches.
- Heat the oil to 350°F (175°C).
- Drop tablespoons of batter into the hot oil, a few at a time.
- Fry for 2 minutes on the first side until golden.
- Flip and fry for 2 more minutes until golden all over and cooked through.
- Lift the fritters out with a slotted spoon and drain on paper towels.
- Repeat with the remaining batter.
- Serve hot with pepper sauce on the side.
