Small pillows of fried dough that Mongolian families dip into milk tea every morning, crisp on the outside and airy within, and always on the table for guests during Tsagaan Sar.

Ingredients
- 3 cups all-purpose flour
- 1 egg
- 1/2 cup warm milk
- 2 tbsp sugar
- 2 tbsp melted butter
- 1 tsp baking powder
- 1/2 tsp salt
- Vegetable oil, for frying
Before you cook
- Whisk the egg, warm milk, sugar and melted butter together in a bowl.
- Whisk the flour, baking powder and salt together in a separate large bowl.
Steps
- Pour the wet mixture into the dry ingredients.
- Mix and then knead by hand for 8 minutes until you have a smooth, firm dough.
- Cover the dough and let it rest for 20 minutes.
- Roll the dough out on a floured surface to about 1/2 inch thick.
- Cut the dough into small diamond or rectangle shapes.
- Pour vegetable oil into a deep pot to a depth of 2 inches.
- Heat the oil to 325°F (165°C).
- Carefully drop a few pieces of dough into the hot oil.
- Fry for 2 minutes on the first side until golden.
- Flip and fry for 2 more minutes until golden and puffed all over.
- Lift the boortsog out with a slotted spoon and drain on paper towels.
- Repeat with the remaining dough pieces.
- Serve warm alongside milk tea, honey or jam.
