Iceland's paper-thin crepe-style pancake, swirled thin in the pan and rolled around sugar and whipped cream, a Sunday breakfast tradition stacked high on the table.

Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 4 eggs
- 2 1/2 cups milk
- 4 tbsp melted butter, plus more for the pan
- 1 tsp vanilla extract
- Granulated sugar and whipped cream, for serving
Before you cook
- Whisk the flour, baking powder, baking soda and salt together in a large bowl.
- Whisk the eggs, milk, melted butter and vanilla together in a separate bowl.
Steps
- Pour the wet ingredients into the dry ingredients.
- Whisk until you have a thin, smooth batter with no lumps.
- Heat a nonstick crepe pan or skillet over medium heat and brush lightly with butter.
- Pour a small ladleful of batter into the center of the pan.
- Immediately tilt and rotate the pan so the batter spreads into a thin, even circle.
- Cook for 1 minute until the edges lift and the underside is lightly golden.
- Flip the pancake and cook the other side for 30 seconds.
- Slide the pancake onto a plate.
- Repeat with the remaining batter, stacking the finished pancakes on top of each other.
- Sprinkle each warm pancake with sugar or spread with whipped cream.
- Roll or fold each pancake into a triangle before serving.
