A rustic Finnish barley flatbread mixed and baked in minutes with no yeast or rising time, traditionally served warm with butter alongside strong black coffee.

Ingredients
- 2 cups barley flour
- 1 1/2 cups buttermilk
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp sugar
- 2 tbsp melted butter, plus more for serving
Before you cook
- Preheat the oven to 500°F (260°C).
- Grease a round baking sheet or pizza pan.
Steps
- Whisk the barley flour, baking powder, salt and sugar together in a bowl.
- Stir in the buttermilk and melted butter until you have a smooth, pourable batter.
- Pour the batter onto the greased pan.
- Spread it into an even circle about 1/2 inch thick.
- Bake for 15 minutes until firm and lightly golden on top.
- Remove from the oven and let it cool for 5 minutes.
- Cut into wedges.
- Serve warm with butter.
