Minestrone alla Genovese

A hearty Ligurian vegetable soup thickened with beans and pasta, finished the Genoese way with a spoonful of fresh basil pesto stirred in at the table.

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery and cook until softened, about 8 minutes.
  3. Stir in the garlic and cook for 1 minute.
  4. Add the zucchini and green beans and cook for 3 minutes.
  5. Stir in the diced tomatoes.
  6. Pour in the vegetable stock.
  7. Add the cannellini beans and the parmesan rind if using.
  8. Bring the pot to a boil, then reduce the heat and simmer for 20 minutes.
  9. Stir in the pasta and cook until just tender, about 10 minutes.
  10. Stir in the spinach and cook until wilted, about 2 minutes.
  11. Remove the parmesan rind.
  12. Season the soup with salt and pepper to taste.
  13. Ladle the soup into bowls.
  14. Top each bowl with a spoonful of pesto and grated parmesan before serving.
