A diner and deli lunch counter staple, poached chicken bound in a creamy mayonnaise dressing with celery and set between soft slices of bread.

Ingredients
- 2 cups cooked chicken breast, diced
- 2 celery stalks, finely diced
- 1/4 cup red onion, finely diced
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup fresh dill, chopped (optional)
- Salt and black pepper, to taste
- 8 slices white or whole wheat bread
- Lettuce leaves, for serving
Before you cook
- Dice the cooked chicken into small, even pieces.
- Finely dice the celery and red onion.
Steps
- Combine the mayonnaise, Dijon mustard, and lemon juice in a large bowl.
- Add the diced chicken, celery, and red onion to the bowl.
- Stir in the chopped dill if using.
- Fold the mixture together until the chicken is evenly coated.
- Season the chicken salad with salt and pepper to taste.
- Cover and refrigerate the chicken salad for 15 minutes to let the flavors meld.
- Lay out 4 slices of bread on a work surface.
- Top each slice with a lettuce leaf.
- Spoon the chicken salad evenly over the lettuce.
- Top each sandwich with a second slice of bread.
- Cut each sandwich in half on the diagonal and serve.
