A no-egg oat and coconut biscuit first baked to survive the long postal journey to Australian and New Zealand soldiers overseas, crisp at the edge and chewy in the middle.

  1. Combine the oats, flour, coconut, and sugar in a large bowl.
  2. Melt the butter and golden syrup together in a small saucepan over low heat.
  3. Dissolve the baking soda in the boiling water in a small cup.
  4. Stir the baking soda mixture into the melted butter mixture, which will foam slightly.
  5. Pour the butter mixture into the dry ingredients.
  6. Stir until a firm dough forms.
  7. Roll the dough into tablespoon-sized balls.
  8. Place the balls on the prepared baking sheets, spacing them 2 inches apart.
  9. Flatten each ball slightly with the back of a fork.
  10. Bake for 12 to 15 minutes, until golden brown around the edges.
  11. Let the biscuits cool on the baking sheets for 5 minutes.
  12. Transfer the biscuits to a wire rack to cool completely and crisp up.
