  1. Preheat the oven to 475°F.
  2. Roll the dough out on a floured surface as thin as you can, into a rough round or rectangle.
  3. Transfer the rolled dough to a baking sheet dusted with cornmeal.
  4. Prick the dough all over with a fork to stop it puffing up.
  5. Spread the pizza sauce over the dough all the way to the edges, leaving no bare crust.
  6. Scatter the Provel evenly over the sauce.
  7. Add pepperoni or sausage on top if using.
  8. Bake for 12 to 15 minutes, until the cheese is fully melted and the edges are browned and crisp.
  9. Let the pizza cool for 3 minutes on the sheet.
  10. Cut it into small squares rather than wedges before serving.
