Brennan's Restaurant in New Orleans invented this flambéed banana dessert in 1951 to honor a local crime commissioner, and it remains the restaurant's single most-ordered dish, served flaming tableside over vanilla ice cream.

  1. Melt the butter in a wide skillet over medium heat.
  2. Stir in the brown sugar and cinnamon and cook until it melts into a bubbling syrup.
  3. Stir in the banana liqueur.
  4. Lay the banana pieces in the syrup and cook for 1 to 2 minutes per side, spooning the sauce over them.
  5. Pull the pan off the heat and pour in the dark rum.
  6. Let the rum sit for a few seconds to warm through.
  7. Tilt the pan slightly away from you and carefully ignite the rum with a long lighter.
  8. Let the flames burn out on their own, gently shaking the pan.
  9. Spoon the bananas and sauce immediately over the bowls of vanilla ice cream.
