Grilled Barramundi with Lemon Herb Butter

Australia's favorite fish for the barbie, a mild, sweet native catch whose skin crisps beautifully on a hot grill and needs little more than lemon and herb butter to let its flavor come through.

  1. Place the fillets skin-side down on the hot grill.
  2. Grill undisturbed for 5 minutes, until the skin releases cleanly and crisps.
  3. Flip the fillets carefully with a thin spatula.
  4. Grill the flesh side for 3 to 5 minutes more, until the fish is just opaque and flakes easily.
  5. Melt the butter in a small saucepan over medium heat.
  6. Add the garlic to the butter and cook for 30 seconds until fragrant.
  7. Stir in the lemon zest, lemon juice, parsley and thyme.
  8. Transfer the grilled fillets to a serving plate.
  9. Spoon the warm herb butter over the fillets.
  10. Serve immediately with lemon wedges on the side.
