Grilled Barramundi with Lemon Herb Butter

Australia's favorite fish for the barbie, a mild, sweet native catch whose skin crisps beautifully on a hot grill and needs little more than lemon and herb butter to let its flavor come through.

Ingredients
- 4 barramundi fillets, skin-on
- 2 tbsp olive oil
- Salt and black pepper
- 1 lemon, zested and juiced
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tsp chopped fresh thyme
- Lemon wedges, to serve
Before you cook
- Pat the barramundi fillets dry with paper towels.
- Rub the fillets all over with the olive oil and season both sides with salt and pepper.
- Zest and juice the lemon.
- Mince the garlic and chop the parsley and thyme.
- Preheat a grill or grill pan to medium-high heat and oil the grates well.
Steps
- Place the fillets skin-side down on the hot grill.
- Grill undisturbed for 5 minutes, until the skin releases cleanly and crisps.
- Flip the fillets carefully with a thin spatula.
- Grill the flesh side for 3 to 5 minutes more, until the fish is just opaque and flakes easily.
- Melt the butter in a small saucepan over medium heat.
- Add the garlic to the butter and cook for 30 seconds until fragrant.
- Stir in the lemon zest, lemon juice, parsley and thyme.
- Transfer the grilled fillets to a serving plate.
- Spoon the warm herb butter over the fillets.
- Serve immediately with lemon wedges on the side.
