A Filipino street food of ripe saba banana and jackfruit rolled in a lumpia wrapper and fried in sugar until it forms a glassy, caramelized shell around the crisp roll.

  1. Lay one lumpia wrapper on a clean surface in a diamond orientation.
  2. Place a piece of banana and a strip of jackfruit near the bottom corner of the wrapper.
  3. Fold the bottom corner of the wrapper over the filling.
  4. Fold in the two side corners.
  5. Roll the wrapper up tightly toward the top corner, wetting the top corner with a little water to seal.
  6. Press the roll into the brown sugar, coating it evenly on all sides.
  7. Repeat with the remaining wrappers, banana and jackfruit.
  8. Carefully lower two or three rolls into the hot oil at a time.
  9. Fry for 3 to 4 minutes, turning occasionally, until the wrapper is deep golden and the sugar has caramelized into a glassy shell.
  10. Lift the rolls out with a slotted spoon and drain them on a wire rack rather than paper towels, so the caramel doesn't stick.
  11. Let the turon cool for a few minutes before eating, since the caramel stays very hot.
