  1. Boil the potatoes in salted water for 15 to 18 minutes, until completely tender.
  2. Drain the potatoes well and return them to the warm pot.
  3. Mash the potatoes while still warm until smooth.
  4. Mix in the butter and salt.
  5. Work in the flour just until a soft, slightly tacky dough comes together.
  6. Turn the dough out onto a well-floured surface.
  7. Roll it out to about 1/4 inch thick.
  8. Cut the dough into rounds or triangles.
  9. Heat the dry skillet or griddle over medium heat.
  10. Cook the scones for 3 to 4 minutes per side, until browned with crisp edges.
  11. Serve warm as part of a fried breakfast.
