A paisa breakfast built from last night's leftover rice and beans, pan-fried until the edges crisp, then topped with a fried egg and served alongside a griddled arepa.

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the tomato and scallions and cook for 2 minutes.
  3. Add the beans with a splash of their broth.
  4. Warm the beans for 3 minutes.
  5. Add the rice to the skillet.
  6. Stir-fry the rice and beans together for 6 minutes until heated through and slightly crisp at the edges.
  7. Push the mixture to one side of the pan.
  8. Crack the eggs into the empty side of the pan.
  9. Fry the eggs sunny-side up for 3 minutes.
  10. Griddle the arepas in a separate dry pan for 3 minutes per side until marked and warmed through.
  11. Fry the chorizo in a small pan if using, about 5 minutes, turning occasionally.
  12. Plate the rice and beans with an egg on top and an arepa and chorizo on the side.
