Thick, fluffy griddle pancakes dropped by the spoonful onto a hot girdle and eaten warm with butter and jam rather than syrup.

Ingredients
- 175g self-raising flour
- 30g golden caster sugar
- pinch of salt
- 1 large egg
- 150ml milk
- butter, for greasing
- butter and jam, to serve
Before you cook
- Sift the flour, sugar and salt into a bowl.
Steps
- Whisk the egg into the flour mixture.
- Gradually whisk in the milk until you have a thick, smooth batter, about the consistency of heavy cream.
- Heat a griddle or heavy frying pan over medium heat.
- Grease the pan lightly with butter.
- Drop heaped tablespoons of batter onto the griddle, spaced apart.
- Cook for 2 minutes until bubbles rise to the surface and burst.
- Flip each pancake with a palette knife.
- Cook for 1 more minute until golden underneath.
- Transfer to a plate and cover with a clean tea towel to keep warm.
- Repeat with the remaining batter, greasing the pan between batches.
- Serve warm with butter and jam.
