Ingredients
- 1 cup bread flour
- 1.25 cups all-purpose flour, plus more as needed
- 2.25 tsp active dry yeast
- 3/4 cup warm milk
- 1/4 cup sugar, divided
- 1 large egg
- 3 tbsp softened butter
- 1 tsp salt
- 1 cup fine dry breadcrumbs
Before you cook
- Combine the warm milk, yeast, and a pinch of the sugar in a bowl and let it sit for 10 minutes until foamy.
- Whisk the egg, butter, remaining sugar, and salt together in a separate large bowl.
Steps
- Stir the yeast mixture into the egg mixture.
- Add half the combined flours and mix until a shaggy dough forms.
- Add the remaining flour a little at a time, mixing until the dough is soft and slightly tacky but no longer wet.
- Knead the dough for 8 to 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for 1 hour 15 minutes until doubled in size.
- Punch down the dough and divide it into 8 equal pieces.
- Shape each piece into an oval roll.
- Roll each shaped roll in the breadcrumbs to coat.
- Arrange the rolls close together on a baking sheet, almost touching.
- Cover loosely and let rise for 35 minutes until puffy.
- Heat the oven to 175°C (350°F).
- Bake the rolls for 15 to 18 minutes until pale golden, taking care not to over-brown them.
