A South African maize meal porridge eaten for breakfast with tangy soured milk, one of a family of pap dishes that shift from breakfast to braai side simply by changing the water ratio.

Ingredients
- 1 cup fine white maize meal
- 2 cups cold water
- 1.5 to 2 cups boiling water
- 1/2 tsp salt
- 1.5 tbsp butter
- sugar, to serve
- 1.5 cups maas, or thick, tangy cultured buttermilk as a practical substitute
Before you cook
- Mix the maize meal with the 2 cups cold water in a bowl, stirring until completely smooth with no lumps.
Steps
- Bring the 1.5 to 2 cups water and the salt to a boil in a pot.
- Pour the maize meal paste into the boiling water gradually, stirring continuously.
- Reduce the heat to low, cover, and let the porridge steam for 5 minutes.
- Stir the porridge vigorously to smooth it out.
- Continue simmering on low heat, stirring every couple of minutes, for 15 minutes until thick and creamy.
- If the porridge becomes too thick, stir in a little more boiling water.
- Stir in the butter.
- Spoon the porridge into bowls.
- Serve with sugar to taste and a generous pour of maas alongside.
