A Danish egg cake that sits somewhere between an omelet and a pancake, its custardy center set under a blanket of crisp bacon and finished with a snow of fresh chives.

Ingredients
- 8 large eggs
- 1/3 cup whole milk
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 oz bacon, sliced into strips
- 1 tbsp butter
- 3 tbsp chopped chives
- Rye bread, for serving
Before you cook
- Whisk the eggs, milk, flour, salt, and pepper together until smooth, breaking up any flour lumps.
- Slice the bacon into strips.
Steps
- Cook the bacon in an oven-safe skillet over medium heat until crisp, about 6 minutes.
- Remove the bacon with a slotted spoon and set aside, leaving about a tablespoon of fat in the pan.
- Add the butter to the pan and swirl to coat the bottom and sides.
- Pour the egg mixture into the skillet over low heat.
- Cook undisturbed for 4 minutes until the edges begin to set.
- Scatter the crisp bacon back over the top of the eggs.
- Transfer the skillet to a broiler and broil for 3 to 4 minutes until the top puffs and turns golden but the center stays soft.
- Remove from the broiler and scatter the chives over the top.
- Cut into wedges directly in the pan and serve warm with buttered rye bread.
