The sandwich sold at every Bavarian butcher's counter and beer garden: a thick, hot slice of finely emulsified pork-and-beef loaf tucked into a crusty roll with sharp mustard.

Ingredients
- 4 slices Leberkäse, about 2cm thick (from a butcher or German deli)
- 4 crusty white bread rolls (Brötchen or kaiser rolls)
- 4 tbsp sweet Bavarian mustard or German mustard
- 1 tbsp butter, softened, for the rolls
- 8 slices dill pickle (optional)
- 1 small red onion, thinly sliced (optional)
Before you cook
- Slice the red onion thinly, if using.
- Split the rolls in half.
Steps
- Heat a dry pan over medium heat.
- Lay the Leberkäse slices in the pan and cook for 3 minutes, until hot through and lightly crisped underneath.
- Flip the slices and cook for another 3 minutes, until crisped on the second side.
- Butter the cut sides of each roll lightly.
- Spread mustard generously over the bottom half of each roll.
- Place a hot Leberkäse slice onto each roll base, trimming the edges to fit if needed.
- Top with pickle slices and red onion, if using.
- Close each sandwich with the roll top and press down gently.
- Serve immediately while the Leberkäse is still hot.
