A diner-counter classic built to be eaten hot: creamy tuna salad piled on toast and run under the grill until the cheese on top turns bubbling and lightly browned.

Ingredients
- 2 x 160g cans tuna in water, drained well
- 4 tbsp mayonnaise
- 1 celery stalk, finely diced
- 2 tbsp finely diced red onion
- 1 tbsp sweet pickle relish
- 1 tsp Dijon mustard
- Salt and black pepper
- 8 slices sourdough or sandwich bread
- Butter, softened, for spreading
- 8 slices sharp cheddar or Swiss cheese
- 2 tomatoes, sliced
Before you cook
- Preheat the grill (broiler) to high.
- Drain the tuna well, pressing out excess liquid with a fork.
- Finely dice the celery and red onion.
Steps
- Combine the drained tuna, mayonnaise, celery, red onion, pickle relish and Dijon mustard in a bowl.
- Season the tuna mixture with salt and pepper and mix well.
- Butter one side of each slice of bread.
- Lay the bread slices butter-side down on a baking tray.
- Toast the bread under the grill for 2 minutes, until lightly golden.
- Flip the slices over so the toasted side faces down.
- Spread a quarter of the tuna mixture evenly over four of the slices.
- Lay tomato slices over the tuna on each sandwich.
- Top each with two slices of cheese, covering the tuna completely.
- Return the tray to the grill and cook for 3 minutes, until the cheese is melted and bubbling with brown spots.
- Top each melt with a second slice of toasted bread and serve hot.
