Invented in 1934 at São Paulo's Ponto Chic lunch counter, the Bauru hollows out a crusty pão francês roll so it can hold roast beef, tomato, and pickled cucumber under a mound of provolone melted into one molten cap before the sandwich is closed.

  1. Warm a skillet over medium heat with the butter.
  2. Lay the roast beef slices in the skillet and warm them for about a minute per side.
  3. Remove the beef and set it aside.
  4. Fill each hollowed roll with a layer of the warmed roast beef.
  5. Top the beef with tomato slices and pickled cucumbers.
  6. Pile the cheese over the top of each open sandwich, letting it mound above the roll's edge.
  7. Slide the open-faced sandwiches under a hot broiler until the cheese melts completely and turns bubbly, about 3 minutes.
  8. Close each roll over the melted cheese while it is still soft.
  9. Press down gently on each sandwich and serve immediately.
