  1. Heat a large pot over medium-high heat with no oil.
  2. Sear the lamb chunks on all sides until browned, about 8 minutes.
  3. Pour in the water and bring to a boil.
  4. Skim off any foam that rises to the surface.
  5. Add the chopped onion and bay leaves.
  6. Reduce the heat to low and cover the pot.
  7. Simmer for 1.5 hours, until the lamb is starting to turn tender.
  8. Stir in the rice.
  9. Season with the salt and pepper.
  10. Cover and simmer for another 30 minutes, until the rice is soft and the lamb falls apart easily.
  11. Remove the bay leaves before serving.
  12. Ladle into bowls and serve hot.
