Réunion Island's everyday comfort dish, smoky Creole sausages simmered down in a thick, ginger-spiked tomato sauce until the whole kitchen smells like a Sunday lunch on the island.

Ingredients
- 1.5 lb (700g) smoked pork sausages
- 2 tbsp vegetable oil
- 2 red onions, chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2-4 small red chilies, minced
- 4 ripe tomatoes, chopped
- 4 sprigs fresh thyme
- Salt and black pepper to taste
- Cooked white rice, to serve
Before you cook
- Chop the onions and tomatoes, mince the garlic and chilies, and grate the ginger.
Steps
- Bring a pot of water to a boil.
- Add the sausages and boil for 10 minutes.
- Drain the sausages and slice them into thick rounds.
- Heat the oil in a large pan over medium heat.
- Add the sausage pieces and brown them on all sides, about 5 minutes.
- Add the onions and cook until soft and golden, about 8 minutes.
- Stir in the garlic, ginger and chilies and cook for 1 minute.
- Add the chopped tomatoes and thyme.
- Season with salt and pepper.
- Cover the pan and simmer for 20 minutes, stirring occasionally, without adding any water.
- Uncover and simmer for 5 more minutes, until the sauce is thick and deep red.
- Serve hot over white rice.
