A festive dish of the Zarma and Songhai peoples of Niger, steamed rice folded through tender moringa or spinach leaves with peanuts and chili, traditionally served at weddings and naming ceremonies.

Ingredients
- 1.5 cups (300g) white rice
- 1 lb (450g) moringa leaves or fresh spinach, chopped
- 1/3 cup (75ml) peanut oil
- 1/3 cup (45g) crushed roasted peanuts
- 1 onion, chopped
- 1-2 chili peppers, minced
- 3.5 oz (100g) dried fish or cooked meat, shredded
- Salt to taste
Before you cook
- Chop the moringa leaves or spinach.
- Chop the onion and mince the chili.
- Crush the roasted peanuts.
Steps
- Set up a steamer basket over a pot of simmering water.
- Steam the rice for 20 minutes, until softened but not fully cooked.
- Bring a separate pot of water to a boil.
- Add the chopped greens and boil for 5 minutes, until tender.
- Drain the greens well.
- Combine the steamed rice and drained greens in a large bowl.
- Stir in the peanut oil, crushed peanuts, onion, chili and dried fish or meat.
- Season with salt.
- Return the mixture to the steamer and steam for 15 more minutes, until heated through and the rice is fully tender.
- Fluff with a fork before serving.
- Serve warm.
