  1. Heat a large flat pan or griddle over medium-high heat.
  2. Add the marinated chicken and spread it out in a single layer.
  3. Cook for 5 minutes, stirring occasionally, until it starts to brown.
  4. Add the sweet potato and carrot.
  5. Cook for 5 minutes, stirring often.
  6. Add the cabbage, onion and rice cakes.
  7. Reduce the heat to medium.
  8. Stir-fry everything together for 8 minutes, until the chicken is cooked through and the vegetables are tender-crisp.
  9. Scatter the scallions over the top.
  10. Toss once more and serve straight from the pan.
