A 19th-century Swedish hotel dish said to be named for a well-traveled guest, ground beef studded with pickled beetroot and capers, pan-fried and crowned with a fried egg.

Ingredients
- 1.3 lb (600g) ground beef
- 1/3 cup (75g) pickled beetroot, finely diced, divided
- 3 tbsp capers, chopped, divided
- 3 small pickled gherkins, finely diced
- 1 small onion, finely chopped, divided
- 1 egg yolk
- Salt and white pepper to taste
- 2 tbsp butter, for frying
- 4 eggs, for topping
- 4 potatoes, boiled and pan-fried, to serve
Before you cook
- Finely dice half the beetroot, half the capers and half the onion, then mix these into the ground beef with the egg yolk, salt and pepper.
- Dice the remaining beetroot, capers, onion and the gherkins, then fold these into the meat mixture.
- Shape the mixture into 4 patties, pressing a shallow dimple into the center of each.
Steps
- Melt the butter in a large frying pan over medium heat.
- Add the patties and fry for 4 minutes per side, until browned and cooked through.
- Transfer the patties to a plate and keep warm.
- Fry the eggs in the same pan, sunny-side up, until the whites are set and the yolks are still runny.
- Top each patty with a fried egg.
- Serve with the pan-fried potatoes.
