An Amsterdam café classic dating to the 1890s, named for the 'bouncer' who once served it to patrons just before closing time, buttered bread piled with ham, cheese and runny fried eggs.

  1. Toast the buttered bread in a dry pan or toaster until lightly golden.
  2. Lay 2 slices of bread side by side, touching, on each of 2 plates.
  3. Layer the ham over the bread.
  4. Top the ham with the sliced Gouda.
  5. Melt a little butter in a frying pan over medium heat.
  6. Crack the eggs into the pan and fry sunny-side up until the whites are set and the yolks are still runny, about 3 minutes.
  7. Season the eggs with salt and pepper.
  8. Slide 2 fried eggs on top of each plate of bread, cheese and ham.
  9. Serve immediately while the eggs are warm.
