Spageti Ayisyen is the beloved Haitian breakfast spaghetti, not a novelty but a genuine daily staple: noodles tossed in a smoky, ketchup-and-epis tomato sauce studded with sliced hot dogs, and always plated with a fried egg and sweet fried plantain on the side.

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook until just al dente, about 9 minutes.
  3. Drain the pasta, reserving 1/2 cup of the cooking water.
  4. Heat the 3 tablespoons of oil in a large skillet over medium heat.
  5. Add the sliced hot dogs and fry, stirring occasionally, until browned at the edges, about 4 minutes.
  6. Add the diced onion, bell peppers, and epis to the pan.
  7. Cook, stirring, until the vegetables soften, about 3 minutes.
  8. Stir in the tomato paste and cook it into the oil, stirring constantly, until it darkens slightly, about 2 minutes.
  9. Add the ketchup, whole scotch bonnet pepper, bouillon cube, salt, and black pepper.
  10. Pour in the reserved pasta water and stir until you have a smooth sauce.
  11. Simmer the sauce for 3 minutes, then remove the whole scotch bonnet pepper.
  12. Add the drained spaghetti to the pan and toss with tongs until every strand is coated.
  13. Sprinkle the sliced green onions over the top and toss once more.
  14. In a separate pan, fry the plantain slices in a little oil until golden on both sides, about 2 minutes per side.
  15. In another pan, fry the eggs to your liking.
  16. Plate the spaghetti with a fried egg and fried plantain slices alongside.
