A Pakistani breakfast of eggs scrambled into a fried onion-tomato masala, quicker and spicier than a Western scramble and always eaten with warm bread.

Ingredients
- 8 large eggs
- 1/4 cup vegetable oil
- 1 medium onion, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1.5 tsp ground coriander
- 1/2 tsp red chili powder
- 1/4 tsp turmeric
- 1/4 tsp garam masala
- Salt
- 1/2 cup chopped cilantro
- Naan or paratha, to serve
Before you cook
- Whisk the eggs in a bowl and set them aside.
- Thinly slice the onion, chop the tomatoes, and slice the green chilies.
Steps
- Heat the oil in a skillet over medium heat.
- Add the onion and cook for 5 minutes until light golden.
- Stir in the tomatoes and cook for 4 minutes until soft.
- Add the green chilies, coriander, chili powder, turmeric and garam masala.
- Cook the spices for 2 minutes, stirring, until fragrant and the tomatoes break down into a thick masala.
- Pour in the whisked eggs.
- Cook over low-medium heat, stirring slowly and continuously, until the eggs are just scrambled through, about 3 minutes.
- Season with salt.
- Stir through the chopped cilantro.
- Serve immediately with warm naan or paratha.
