Ingredients
- 12 oz black pudding, sliced into 1/2-inch rounds
- 2 tbsp butter, divided
- 2 crisp eating apples, cored and sliced into rounds
- 1 tbsp sugar
- Salt and black pepper
- 4 fried or poached eggs, to serve (optional)
- Buttered toast, to serve
Before you cook
- Slice the black pudding into rounds about 1/2 inch thick.
- Core the apples and slice them into rounds of similar thickness.
Steps
- Melt 1 tablespoon of butter in a large skillet over medium heat.
- Lay the black pudding slices in the pan without crowding them.
- Fry the black pudding for 3 minutes per side without moving it, until a crust forms, then transfer it to a plate.
- Melt the remaining butter in the same pan.
- Add the apple slices and sprinkle over the sugar.
- Cook the apples for 4 minutes per side, turning once, until softened and lightly caramelized.
- Season the apples with a pinch of salt and black pepper.
- Return the black pudding to the pan to warm through with the apples for 1 minute.
- Divide the black pudding and apple between plates.
- Serve with a fried or poached egg and buttered toast, if using.
