One of Finland's national dishes: beef and pork from the Karelia region, slow-roasted for hours in a sealed pot with nothing more than root vegetables, salt and whole spices.

Ingredients
- 1.5 lb beef chuck, cut into large chunks
- 1.5 lb pork shoulder, cut into large chunks
- 3 carrots, cut into large chunks
- 2 onions, quartered
- 1 tbsp whole black peppercorns
- 1 tbsp whole allspice berries
- 2 bay leaves
- 1 tbsp salt
- 3 cups water
Before you cook
- Cut the beef and pork into large, even chunks, about 2 inches.
- Cut the carrots into large chunks and quarter the onions.
Steps
- Preheat the oven to 300°F (150°C).
- Layer the beef and pork chunks in a heavy, ovenproof pot.
- Scatter the carrots and onions over the meat.
- Add the peppercorns, allspice berries, bay leaves and salt.
- Pour in the water until the meat is just barely covered.
- Cover the pot tightly with its lid.
- Roast in the oven for 4 hours without stirring, until the meat is completely tender.
- Remove the bay leaves.
- Taste and adjust the salt.
- Ladle into bowls and serve with the cooking juices spooned over.
